Easy salsas

These easy salsas and slaw can be paired with barbeque meals, tacos, fajitas, fish, grains, rice – anything really. They pack a punch of flavours and it’s a really easy and delicious way to get your veg. Our recipes here are tried and tested and completely yummy – easy tomato salsa, easy sweetcorn salsa and easy mixed veg slaw.

Easy slaw
 1 red pepper
 2 tomatoes
 2 spring onions
 1 medium red onion
 2 carrots
 1 apple (like a Gala or Cox)
 25 g coriander
 10 g flat leaf parsely
 10 g mint
 2 tbsp lime juice
 50 ml red or white wine vinegar
 50 ml tabasco (or other hot sauce)
 1 tsp sugar
 1 pinch salt
 1 pinch black pepper
Tomato Salsa
 10 tomatoes
 1 medium/large red onion
 ½ cup fresh coriander
 1 tbsp tabasco (or similar hot sauce)
 2 tbsp lime juice
 1 tsp sugar
 1 pinch salt
 1 pinch black peooer
 cold water (optional)
Sweetcorn salsa
 198 g (tin) sweetcorn, drained or the equivalent weight of frozen sweetcorn (cooked and cooled)
 1 red pepper
 3 tomatoes
 1 medium/large red onion
 ½ cup fresh coriander
 1 tbsp tabasco (or similar hot sauce)
 2 tbsp lime juice
 1 tsp sugar
 1 pinch salt
 1 pinch black pepper
 cold water (optional)

Easy Slaw Method
1

Slice the red pepper, carrots, apple into thin slices. Deseed and slice the tomatoes.

Cut the onion into small squares and add with all of the above into a large bowl

Chop the coriander, mint and parsley and mix into the veg in the bowl

In a cup, combine the lime juice, tabasco/hot sauce, sugar, white/red wine vinegar, add salt and pepper to taste. If it’s too spicy dilute with some cold water

Pour the dressing mixture over the veg in the bowl and mix it really well to combine. Taste and adjust seasoning if necessary.

Store in the fridge until you are ready to eat it.

Tomato Salsa Method

Half the tomatoes and scoop out the seeds. Roughly chop into small squares and place into a bowl

Finely chop the onion into small squares and place into the same bowl as the tomatoes.

Chop the coriander and add to the tomatoes and onions

In a cup, mix the tabasco/hot sauce, lime juice, sugar together. Add some salt and pepper and dilute with cold water until it tastes good to you (you don’t have to use any cold water if you like it spicy)

Pour the dressing mixture over the tomatoes, onions and coriander and mix together well. Taste and adjust the seasoning if necessary

Store in the fridge until you are ready to eat it.

Sweetcorn salsa method

Drain sweetcorn and place in a bowl

Cut red pepper and red onion into small squares and add to the sweetcorn

Cut the tomatoes in half, scoop out the seeds and chop into small squares, add to the sweetcorn, onion and pepper, along with the chopped coriander.

In a cup, mix the tabasco/hot sauce, lime juice, sugar together. Add some salt and pepper and dilute with cold water until it tastes good to you (you don’t have to use any cold water if you like it spicy)
