INGREDIENTS
2 chicken breasts sliced into goujon pieces (or 2 halves of a chicken)
2 red onions and 1 carrot thinly sliced
mixed fresh peppers (red yellow, orange, which ever you prefer) thinly sliced
handful green beans/french beans and broccoli finely sliced
4 large sliced tomatoes (for serving)
2 rice measuring cups short or long grain rice
FOR THE PIRI PIRI MARINADE
5 cloves, garlic crushed
3 red chillies (as hot as you dare!)
1 tsp ginger, grated or a tsp of ready minced ginger
50 ml vegetable oil
25 ml white or red wine vinegar
3 tbsp soy sauce
1 tsp tabasco (or more if you want it hot!)
1 tbsp smoked paprika
1 tbsp sweet paprika
3 tsp dried oregano
1 tsp caster sugar (optional)
2 tbsp lime/lemon juice
HOW TO MAKE
1
Put the piri piri marinade into a bowl. Add chicken and leave to marinade for at least an hour.
2
At this point make coconut ginger rice or plain long grain rice in your rice cooker.
3
Take 2 tbsp of the piri piri infused oil and heat in a pan and cook the onion for 5 minutes.
4
Add the marinaded chicken into the pan.
5
5 minutes before the chicken is ready, add the sliced veg to the pan and cook until soft.
6
Serve with delicious coconut ginger rice which goes perfectly with the spicy piri piri flavours or plain long grain (or even short grain) rice if you prefer.
