Rice pudding is not just for winter. Use your Rice Cooker for best results!
Measure your short grain rice with the measuring cup you got with your rice cooker. For this recipe you need to start with two of those measures.
Measure first the rice then rinse rice in cold water, and place rice, water and salt into the rice cooker, choose the white rice setting and start the cooking cycle. Cook until it clicks automatically to warm.
Meanwhile briefly whisk evaporated milk, coconut milk, sweetened condensed milk, cinnamon, lemon zest (a large thin slice of zest, not grated) and nutmeg to combine together.
When rice has been cooked and the rice cooker has switched to warm, disconnect the cord from outlet, stir once and let the cooked rice cool for 15 minutes.
Then add the whisked milks into the rice, close lid and set the cooker to the KEEP WARM setting. Check about 30 minutes later and see if it is at the consistency you like. If it's too thick, add some milk/plant milk or more coconut milk to loosen
Discard the cinnamon stick (if using) and the lemon zest.
Place into individual dishes and garnish with ground cinnamon and cream if desired.

I’ve just received my rice cooker and will enjoy making rice pudding as well as all the savoury dishes. I’m interested in making a tapioca pudding and then finishing it with coconut milk. I thought I had a recipe but it might not work with the rice cooker. Has anyone made tapioca pudding in it. How would you do it. Recipe please!

Hi, new owner of a Panda in Sweden here! We make a traditional rice porridge with short grain rice, cinnamon and fresh milk. Because it’s a porridge and not a pudding, the amount of added milk is much larger. Would it be possible to make it in the Panda if following these steps, cooking the rice first in water, and then with fresh milk on the keep warm setting, or will I risk damaging my Panda if I try? If not, would it work if I substitute plant milk for dairy milk?
The stovetop method for cooking this is to first boil rice for ten minutes with twice the amount of water, and then add ca 4x as much fresh milk, bring to a boil, then reduce heat and simmer on the lowest heat for at least 40 minutes. I’ve made it in a traditional slow cooker with good results.
Hi, as detailed in the user manual you cannot cook with milk in a sealed unit rice cooker as it will boil over. We have a recipe in the manual for rice pudding which is cooked with water first and then the milk is added on keep warm. You can follow this recipe and adjust to your taste or just do as you suggest with adding milk when the rice has finished cooking with water and is on keep warm.
