Tahdig, pronounced tah-deeg, literally means ’bottom of the pot’ in Persian This recipe could just be the beginning of rice more beautiful. Using the CRUST function of the rice cooker it is truly a taste sensation.
Gather the ingredients together
Cut the potato into thin slices.
Finely slice the onion and crush the garlic. Fry in olive oil and leave to cool
Arrange the sliced potato on the bottom of the inner bowl so the whole of the bottom of the bowl is covered.
Add the 2 cups of rice on top of the potatoes (wash the rice first if it's needed)
Add water to the 2 cup mark for long grain
Close the lid, select the 'Crust' setting and press and hold 'Start'. For this recipe we left the Crust cooking time to the default 1 hour 30.
After a while of cooking, the rice cooker will beep (this differs depending on how the fuzzy logic assesses the cooking programme). At this point you can add saffron, butter, onions and garlic and salt and pepper (or any other spices you want) and gently mix through. Close the lid, the cooking cycle will continue
The rice cooker will beep to signal the end of the cooking cycle.
Carefully tip the Tahdig onto a plate and serve. The best way to do this is put the plate on top of the bowl like a lid, then using oven gloves or a tea towel, carefully tip the bowl upside down and the Tahdig will fall easily onto the plate.
This recipe is best made with a minimum of 2 cups of rice, you can scale the recipe up to make the full 8 cup capacity if you want to. If you do cook the full capacity, you may need to set a longer cooking time.
You can also replace some of the water with stock instead

Hi, no you can’t use the slow cook setting for cooking Tahdig if your rice cooker doesn’t have this setting. The Crust setting on our rice cookers are specially formulated to cook the rice and make the crust. The slow cook setting cannot replicate this.

Don’t think you can do Tahdig’s in cookers with Ceramic bowls.
Yes and this recipe shows that you can do it in a rice cooker with a ceramic coated bowl and it works fabulously well. 🙂
thats confused me as Yum asia told me their upcoming cooker couldnt do Crust because it had a ceramic bowl?
Sakura and Bamboo have ceramic coated inner bowls which are made from 5 metallic layers. The new rice cooker you are referring to (Fuji) has a handmade natural ceramic (clay) inner bowl. It’s the natural handmade ceramic bowls which cannot be used for Tahdig.

My tahdig always stuck to my pan until I learned this trick: Before putting them on the bottom, measure the potato slice volume in the water cup and when you’re adding water to the rice, add that amount over the appropriate mark.
Hi, we have no issues with the Tahdig sticking to the inner bowl and just used normal water levels for the amount of rice. It could depend how waxy or floury your potatoes are and how much they absorb the water. Thank you for sharing your tip for other people who may have the same issue.

This possibility to cook Persian rice helped me to decide and cook this rice cooker.
But I’m a bit confused. Normally I would precook rice in saulty water and then I would add saffron water on the bottom and top up with rice. But if I put the potatoes already, how can I add the saffron to the bottom of my rice? The same about cooking with yoghurt layer.

Hi, yes you can make the Tahdig without the potatoes. Just leave them out and put the rice and water into the bowl without them.

Hi, Panda does not have a crust setting so this recipe is not suitable to make in Panda.
