This sweet, juicy scrumptious peach and blueberry cobbler is made from scratch and is the perfect simple Summer dessert. All done in a rice cooker this recipe is worth the effort.
Mix peaches, blackberries, sugar, butter and cornstarch and add to the botton of your rice cooker inner bowl (fruit layer). Puree the berries with a masher if you don’t want a lumpy whole fruit mix.
Mix the dry ingredients of the cobbler layer in a separate bowl then add the wet ingredients.
Stir until combined. It’s okay if they are a few lumps. Then add this on top of the fruit layer in your rice cooker bowl. Spread it out if needed.
Mix the sugar and cinnamon and sprinkle over the top.
Using the SLOW COOK function set the time for 2 hours and 30 minutes. Press START and do not open the lid until cooking is finished.
Serve with ice cream or whipped cream.

Notes
This great cobbler recipe can be used with other berries such as raspberries
or blueberries, or mix them for a summer berry mix. Plums also work well instead of peaches but you may have to add more sugar to account for the tartness of the different fruit. Reverse the amount for a different taste altogether.
