One of the easiest risotto’s you can make. No labour-intensive stovetop method that requires constant stirring while you add portions of hot broth. All done in a rice cooker, it’s easy and largely a hands-off task.
Heat a little olive oil in your rice cooker inner bowl on SLOW COOK (or SHORT GRAIN) mode for at least 2 minutes.
SAUTE THE AROMATICS - Add the garlic and onion and saute for another 2 minutes. (Add the chicken here if using this protein).
ADD THE WINE - Once they start to turn brown add the white wine. Allow the wine to heat up and reduce a little.
ADD THE RICE - Add the arborio rice and stir. Allow a few minutes for the rice to absorb the wine then fill to the 2 cup SHORT GRAIN level line with the chicken stock.
COOKING STEP - Select the SHORT GRAIN function and press START. Stir half way through. (Add shrimp at this point if using this protein).
ADD THE CHEESE - Stir in the parmesan and season to taste with salt and pepper at this point.
ADD THE GREENS - A few minutes before the end of cooking open the lid and add the spinach / rocket
GARNISH - When the SHORT GRAIN function ends take out and add grated parmesan with some parsely to garnish.

Notes
The rice should be tender, but still have a little ’bite’ to it, what the Italians refer to as al dente. There should be enough liquid remaining to make it just slightly soupy. If there is still a lot of liquid remaining, and the rice is still hard in the middle, cook it a little longer. If adding harder vegetables such as asparagus do so at step 5.
This recipe is enough for 4 servings not 1! I have just tried it in my new Bamboo cooker and I also needed to change the liquid ratio as it seemed too little liquid for the amount of rice. Your other risotto recipes have much more liquid. I followed the ratios on my rice instructions that I normally do and it worked fine. The rice seemed a little overcooked if anything. How do I get a more al dente rice as the cooking time is automatic?
Hi Joanna, the serving size really depends how much people eat as not everyone eats the same amounts. Our system defaulted to 1 serving for some reason so we have changed the recipe to show it will serve between 2-4 people. If you changed the proportions we give in the recipe, this is why the rice was overcooked. You can either cook the recipe with the proportions (it has been tested and it works with the proportions we have given) or you can use different ratios like you did but add less liquid. If the rice was overcooked then you added too much liquid to the recipe.
Thanks. Your risotto recipes all have different ratios of liquid to rice in the recipe, which I found confusing. Am I just better adding liquid to the cups level on the machine? I was only making it using 1 cup of time for 2 people. This isn’t marked on the bowl but I can estimate it. There must be less liquid required than when cooking on a hob, I guess because there is no evaporation. Lots if testing required!
Hi Joanna, each risotto recipe has different ingredients, so this affects the different ratios of liquid needed – it’s not a one rule for all risottos, it really does depend. If you were not using the recipe as printed with these quantities, this is why it didn’t cook correctly. However, if you only want to cook half of the recipe, just half all the ingredients and use this amount.
