Kotori tomato and basil rice

Pretty much any meal can be upgraded with this delicious rice recipe. Adapt it to your tastes but just make sure that the tomato and basil are the heroes of the rice. We use paste (instead of tinned chopped tomatoes) because it works better to keep the rice fluffy and a combination of dried and fresh basil introduced at the start and added at the end of cooking for optimal flavour profile.

INGREDIENTS
 ¾ rice measuring cups long grain rice
 2 tbsp brown onion - finely diced
 1 clove garlic - minced
 1 tbsp tomato paste
 60 ml vegetable stock
 2 tbsp red or green pepper
 1 tsp dried basil
 1 tbsp of fresh chopped basil
 1 tsp paprika
 1 tsp sugar
 4 tbsp cherry tomatoes (quartered) - optional
 pinches of salt and pepper to taste

HOW TO MAKE

Add rice to the Kotori inner bowl.

Mix the tomato paste with the water, paprika, sugar, garlic, black pepper and dried basil.

Add the tomato mix to the rice. Top up with water to 4mm below the LONG GRAIN water level 1 line and stir.

Add the cherry tomatoes if you wish.

Place the lid, select the LONG GRAIN function and press START.

Once finished, add the fresh, chopped basil and salt (add more pepper if needed).

Serve with a parsley garnish and fresh cut cherry. tomatoes (optional) if you wish on the side.

The sugar helps balance the sourness of the tomatoes. Adjust accordingly. Have a friend who likes meat? Simply add some chicken to the rice for a perfect combo. Add some cheese (non vegan) for an extra flavour dimension.
