Pilaf or pilau is a rice dish, or in some regions, a wheat dish. The recipe usually involves cooking in stock or broth, adding spices, and other ingredients such as vegetables or meat. The technique for cooking achieves rice grains that do not stick together.
This pilau rice is a really easy side dish that you can whip up in no time with your rice cooker. This version is vegan and really delicious. We served this as part of a finger-food medley of samosas and pakora but it could be paired with curries, any other main dish that you want to add a bit more flavour to.
Heat the oil in to your rice cooker inner bowl either in a pan or using the SLOW COOK or similar
function. When hot add the onion and gently cook until softened.
Stir in the spices and herbs and cook for 2 minutes then add the rice and stir until coated.
Transfer rice and spice/onion mix to your rice cooker bowl (if using a pan) and add cold water to
the level 2 white rice level line on the rice cooker inner bowl.
Close the lid, use the WHITE, REGULAR or LONG GRAIN function of your rice cooker and press START.
Once cooked, open the lid, fluff up the rice with the spatula and remove the remaining whole pieces of spice.

Made this last night with brown basmati rice. It was awesome! Didn’t have cardamom pods so looking forward to getting some and trying it again!
Do you rinse your rice before adding it to the spices in the pan? Doesn’t the water on the grains make it spit?
Hi! If your rice needs washing then you can leave it in a sieve to drain/dry a little before adding to the spices in the pan. However in our experience it doesn’t really spit when added wet to the pan.
